Chocolate and Hazelnut Cake for New Year’s Eve

First of all, gather the following ingredients:
Hazelnuts–7 ounces, egg whites–6, mini chocolate chips–6 ounces, heavy cream–4 cups, bittersweet chocolates–6 ounces, almond extracts–2 tablespoons, vanilla extract–2 tablespoons, granulated sugar–2 cups, salt–as per taste
Once you have gathered the ingredients, we are ready to cook.
Preheat the oven to 350°. Line-up 2 baking sheets with parchment papers. You need to draw on one of the parchments—two 8-inch rounds and one 8-inch round on other. You need to spread the hazelnuts, on the third baking sheet. Next, toast it for 15 minutes and stop when it turns brown. Cool it slightly before transferring it to a towel only to rub to remove its skin.
After that chop the nuts and lower the temperature of the oven to 225°. Beat the egg whites, add salt and wait for the soft peaks. Add the granulated sugar, vanilla and almond extracts. Further, add hazelnuts and chocolate chips. To marble the cake, you need to pour the melted chocolate slowly inside the bowl and gently keep on folding. Spread the mix in the circles drawn and you need to bake it for at least 2 and a half hours. Next, turn the oven off and let the cake cool completely. Beat the cream until it turns firm. Spread the whipped cream on the cake’s layers and stack them. Put it in the refrigerator overnight. Garnish with chocolate shavings and serve.
